A butcher’s block is made of pieces of end grain wood, usually beech or maple, glued and bolted together to act as a surface for cutting meat. There are many advantages to wooden blocks. They absorb the impact of knives and meat cleavers. They don’t dull the edge on butcher’s knives. They are easy to clean and maintain.
