Why won't my villagers restock

These are converted villagers that were once zombie villagers. I have them in my area of the map a decent distance away from an actual village. Everytime I convert one back to normal, I can trade with them until they run out of items and they will not restock. They do not work at all, I set their work station blocks near them and they do nothing.

My suggestion would be to, at the beginning of night, break and very quickly replace the beds next to each villager not sleeping. They should quickly get in bed. I have this issue sometimes in my trade halls and I find the simplest way to solve is to isolate the villager.
