CPU or software encoding is more accurate than GPU encoding. The result is that CPU encoded files are typically either higher quality for the same size, or a smaller file size for the same quality. GPU encoding on the other hand is more power efficient than CPU encoding.

Have a look at the linuxserver/Plex doco in docker hub and towards the end it details the video card parameters for Intel and NVIDIA.
