Crossbows are unique in the sense that they do not scale AT ALL with any stats. So you’re build will essentially be to just build you’re character into a tank. Outrageous health and whatever other stats you may want. I wouldn’t recommend putting you’re stats past 18/20 (str/dex) as with those stats you can wield absolutely every crossbow.

Wolnir's Holy Sword has good reach and innate faith scaling. Pure physical AR. The weapon art is mediocre. Dragonslayer Swordspear is another option. Really cool weapon art and a unique moveset.
