Also, at night they always seem to fail to get back into their houses, which makes me think they are completely glitched. I tried going into a creative mirror of the world but they would not take the jobs. However, I tried doing /kill @e and then respawning the villagers in with spawn eggs, and they then managed to take their jobs.

The villagers can pathfind through the trapdoors, so they are likely claiming the workstation instead of the one the workstation is in front of. Block off all the other villagers with a block so they can't pathfind to the workstation.

The problem is that all your villagers think they can pathfind to any workstation you place, so if you have 20 villagers, it's a 1/20 chance that the village that claims it is the right one. To fix this, break all workstations and replace them with solid blocks.

To change a villager's job, all you need to do is destroy the job site block that they're currently using as their profession. It often takes several minutes until they accept the job, even if they are trapped directly in front of the job table. It only takes around 6-8 other villagers with jobs in the vicinity for the issue to appear. I have a problem in my Minecraft world where no villager will accept any Job.
